This is a Google Maps on Android question. We have a Pixel 3a on Android 12 and a Pixel 3a XL on Android 11 (because of a lot of blowback from folks who upgraded to 12 and wish they hadn’t). Spotted first by 9to5Google, it used to be that when you wanted to remove the top search bar and the bottom bar from Google Maps, you would tap on the screen and end up with a full-screen map.But Google has made a change. Now, if you want to see just a map and nothing more than a map on your display, you simply swipe up on the search bar and both top and bottom bars go away.

My Samsung S21+ does this as well. This happens because the phone goes into driving mode by default. Go to Settings -> Transportation -> Driving mode -> and turn off launch driving mode when navigating in Google Maps.
